Healthy and Delicious Kid-Approved Dinner Recipes to Try

If you can, you want your child to eat ONLY nutritious foods at each meal. But let’s face it: most kids are picky eaters and don’t like to eat vegetables. The good news is that there are so many ways to incorporate nutrition into their daily meals that kids won’t even notice!

Try these delicious and healthy kid-approved dinner recipes!

Pasta with chicken and broccoli with cheese

What do you need:

  • 2 boneless, skinless chicken breasts, cut into bite-size strips

  • 1 head of broccoli, cut into florets

  • 3 cups fusilli pasta

  • 1 can of chicken broth

  • 3 garlic cloves, minced

  • 2 1/2 cups

  • 1 tablespoon of olive oil

  • 4 pinches of Italian seasoning

  • Freshly grated Parmesan cheese to taste

  • Salt and pepper to taste

  • Red pepper flakes to taste (optional)

Sauté chicken in olive oil over medium high heat in a large pot for 3-4 minutes. Add the pasta, broth, garlic, and half and half to the pot. Increase heat and bring mixture to a boil, reducing heat once it boils. Cook over low heat for 10 minutes, stirring occasionally.

Reduce heat to medium-low before adding broccoli. Cook over low heat, covered, for 5 minutes. Add salt and pepper (and red pepper flakes if using). Stir and remove from heat. Transfer to a serving plate and serve topped with Parmesan cheese.

Ultimate meatball sandwiches

What do you need:

  • 6 hot dog buns

  • 1 package of Rosina Italian Style meatballs

  • 1 can of crushed tomatoes

  • 3/4 cup mozzarella cheese shredded

  • 2 garlic cloves, pressed

  • 1 tablespoon + 1 teaspoon olive oil

  • 2 teaspoons dried oregano

  • 1/2 teaspoon of sugar

  • 1/2 teaspoon salt

  • 1 small pinch of red pepper flakes

Heat the olive oil in a saucepan over medium heat and cook the garlic, oregano, and red pepper flakes for 1 minute. Add the tomatoes, sugar, and salt and stir until the ingredients are well combined. Add the meatballs and stir, covering with sauce. Cover and cook for 20-25 minutes, stirring occasionally.

Remove from heat and place meatballs and sauce on hot dog buns (divide into 6 buns). Top each with mozzarella cheese and cook on a preheated broiler for 2 minutes (check frequently to make sure they don’t burn!). Let cool for several minutes before serving. Best served with healthy fries or a salad!
